Mrs. Kellogg's Nut and Vegetable Roast

Battle Creek Sanitarium, Michigan, 1904
4

What was that? Honestly, I’m not a picky eater, but that was just really … unpleasant.

It was a textural nightmare.

It was an intensely sad beige flavor.

It was, in a word, odd.

I’m not going to tell you that it’s worth making, though if you’d like to experiment with it you can find the Protose recipe, here, and the Nut and Vegetable recipe, here.

This meal comes from the book Healthful Cookery, which was written by Mrs. Ella Eaton Kellogg of the Battle Creek Sanitarium, published in 1904. As I wrapped up the experiment, I ran to the archives wondering exactly who Mrs. Ella Eaton Kellogg was.

I think I found my sworn (yet historical) enemy.

Here is her story. And it honestly gets more and more weird the farther you go.
